Summer BBQ Tips and Recipes to Impress Your Friends

We curated our very best BBQ recipes from the staff and here’s what we came up with.

The Best Ribs We’ve Ever Had

Tavis is our resident ribs expert. If he says these are the best ribs he’s had, then they must be damn good.

Dry Rub

1 tbs brown sugar
1 tbs pepper
2 tbs salt
1 tbs chili powder
1 tbs cayenne pepper
1 tbs paprika
1 tbs garlic powder

Rub on St. Louis Style ribs and wrap in foil and slow cook at 225 for 9 hours.

BBQ Sauce

2 cloves garlic minced
1/2 cup bourbon
1/2 teaspoon black pepper
1/2 tbs salt
2 cups ketchup
1/3 cup cider vinegar
1/4 cup Worcestershire sauce
1/2 cup brown sugar

Cover ribs and grill until outside has a light crisp.

Fancy Grilled Chicken… For the Ladies

Damian claims to not cook… well. He found this recipe online, but it’s simple enough for a monkey to follow. You’re smarter than a monkey right? Plus, there’s bacon and gouda so both the ladies and the fellas have something to rave about with this one.

4 boneless chicken breasts
4 slices bacon (go for 8, no ones looking)
3 -4 ounces smoked gouda cheese
1/4 teaspoon cayenne
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon pepper

Combine, cayenne, garlic powder, paprika and pepper. Flatten chicken breasts to approx 1/4″ thickness. Season both sides of chicken with the cayenne mixture. Place small amount of cheese on chicken and roll up, pressing firmly. Wrap each stuffed breast with a bacon slice and then brown over medium heat until bacon just begins to crisp. Grill in shallow pan until chicken is cooked.

Burgers To Make You Kill Yourself

Burgers are a staple of Barbecues, but that doesn’t mean they should be bland hockey pucks with ketchup. Carlo makes the best burgers we’ve eaten and he’s finally sharing one of his recipes.

1 medium to large onion
5 medium sized radishes
green beans
1 tomato
some lettuce
2lb of chopped meat
whole wheat sliced bread
dijon mustard
NY Sharp cheddar

Dice about half the onion and 2-3 of the radishes and mix chopped meat. Add mustard to chopped meat and mix well. (Add salt and pepper to taste.)

Cut discs from the rest of the onion and cut the other radishes into wedges. Sauté onion, radish, and green beans in a buttered aluminum pan. Form 8 burgers out of the meat and grill. When cooked to the temp of your liking place a decent slice of the cheddar on each burger. Toast the bread on the top rack of the grill.

Serve burgers stacked in the following order: bread, tomato, burger (cheese up), lettuce, bread. Offer the cooked green beans, onions, and radishes as a topping or hot salad.

Ill Pasta Salad

Mayo is a necessity to eating outdoors on a hot day, go figure. Chris offers us a simple but baconified pasta salad that’ll make gramma jealous, but still come back for thirds.

1 (12 ounce) package uncooked small shells pasta
10 slices bacon
1 cup mayonnaise
1/4 teaspoon garlic powder
1/2 teaspoon pepper
1 large tomato, chopped
1 (4.25 ounce) can sliced black olives
1 stalk celery chopped

Boil pasta until al dente, duh. Cook bacon until crispy and then crumble. Mix all ingredients in a big bowl until you’re happy. Place next to a nice burger or some shit, and enjoy!
